I know the question of is it safe or does it contribute to off flavors has been asked but this is a different question.

Has another done 2 recipes with only changing the mash for 1 hour to overnight to see if there are differences in flavor? I am not saying off flavor just differences. I am wondering if a longer mash changes the flavor in any way?
 
A 4 hour mash has gotten me a very low FG and close to 100% attenuation a couple of times.

It's great if you're a making a light beer.

You may have to mash a little hotter if you go overnight.
 
I had a 30 min mash and a overnight mash side-by-side for a couple weeks... the taste was very similar (taking the different hop combo into account).

Mouthfeel/malt flavors were similar.

Not sure if that is what you're looking for.

The overnight mash attenuated at almost the same rate as the 30 min mash, which I found pretty interesting.
