I am in the planning stages of making a Pumpkin Ale recipe kit from my LHBS. The recipe uses Liberty Hops at 60 min and Cascade at 10 minutes. From my research it looks better to avoid the late hop addition so I am taking that out, but which one would be the better choice for bittering. It is an Amber Ale base. Thanks

I did a pumpkin ale that used .75oz Galena at 60 minutes.

I then changed things up and did a Spaghetti Squash ale with .75oz nugget at 60, 1oz Sterling at 15 and 1oz Sterling at 0. Spaghetti Squash has a black pepper taste to me so I used T-58 yeast which also is described as peppery. It turned out fantastic.

So I can't address whether or not a late addition is no good (mine worked well in the Spaghetti Squash)
For the choice of hops look at the descriptions and choose one that describes what you want in the finished beer.

Your correct in leaving out the late hops if you want the aroma, spices and flavor of the pumpkin to shine through. I am doing a recipe soon with UK Goldings hops to have for Thanksgiving, as a family request. They seem to play nice with the ingredients too. Just depends what you are trying to go for in the final product. Good luck!
