I am getting ready to make a doppelbock and plan on lagering it in my garage fridge at 39 to 42 degrees, does anyone have a good suggestion on a high alcohol tolerant yeast to use.

I'm a fan of White Labs WLP833. I brewed a doppelbock with it about 2.5 months ago. It tasted nice at kegging and I can't wait to try it out in a couple of weeks after two months of lagering.

WLP833 is a solid choice when you want the malt profile to shine while muting the hops a bit. Make an appropriate, large starter and pitch at 50 or slightly below and hold it at 50 until the diacetyl rest.

Good luck!

Last year I used WY2206 Bavarian lager. Turned out very nice. This year tried WY2124 Bohemian lager. Just racked for lagering last night so the final word won't be in for months, but the sample was good. In both cases I did a 1.052-ish Vienna 1st and used 3 qts of freshly harvested yeast slurry. Both yeasts list alcohol tolerance of 9%.

I know this post is old but I am looking at brewing a Bo Pils with the WY2124 and then using harvested slurry for a doppelbock. Was wondering how your doppelbock came out using WY2124?

Both the WY2206 and last year's WY2124 worked well. No difference as far as I could tell. When I gear up for my lagers this year, I'll use whichever my LHBS has, and if they have both, whichever has the freshest date.
