I decided to celebrate the day after x-mas with brewing a pair of Belgians parti-gale style. I used the 10.10.10 recipe as an inspiration but I calculated for a lower volume, substituted honey malt for the Munich and upped the wheat a little. I have 4.6g @1.084 into the fermenter and i am planning to make a syrup with 2lbs sugar and feed it tomorrow morning. This thing is kicken after about 6 hours. The Belgian pale got about .5lbs oats and an extra lb of honey malt in the mash. I have 4.75 gallons into the fermenter @ 1.035 for beer #2.

Just measured the gravity after 2 weeks and it is down to 1.008 making 12.5%...yikes:drunk:. Tasted the thief sample and this is a strong beer. The weak beer finished at 1.006 and tastes like i extracted alot of tannins. Or maybe this is what too much honey malt tastes like?
