Okay, I've never seen or tasted a braggot, but I've made a decent number of beers and I've dabbled with mead. I was thinking taste-wise, a Wit with orange blossom honey might taste pretty awesome, although wheat beers taste best young and meads seem to need to age, but how does this sound (I'm trying to keep this relatively simple due to lack of free time):

2.5 gallon boil with 4 lbs. Wheat DME
1.5 oz. Saaz pellets (3.3%AA) @ 60 min.
0.5 oz. Saaz pellets (3.3%AA) @ 45 min.
1 oz. crushed coriander seeds @ 15 min.

flameout, chill to 100 deg.F, rack to primary over 5 lbs. Orange Blossom Honey
mix/aerate, add chilled water to make 5 gallons around 70 deg.F
pitch a pack of Wyeast 3944
Bottle prime to 2.4 volumes CO2

according to Tastybrew…

OG: 1.072
FG: 1.018
IBU: 27
ABV: 7.0%
SRM: 4

How does that sound? I was thinking, as an option, I could cut back to 3 lbs. DME, and do a partial mash of 1 lb. Belgian Pilsner and 0.5 lb. Flaked Wheat.
 
Hmmm, no opinions?

I finally got around to downloading BeerSmith and using the all-extract recipe, and switching out the hops schedule to:

0.5 oz. Saaz (4.0%AA) @ 60 min
0.5 oz. Citra (12.0%AA) @ 15 min (liven up the citrus flavor)
1.o oz. crushed coriander @ 5 min

I get:

OG: 1.069
FG: 1.001 (sounds low, right?)
ABV: 9.0 %
SRM: 5.9
IBU: 20.1

Another option would be to do away with the bittering hops and only add 0.75 oz. Citra @ 15 min. for IBUs around 18. I've never tried anything like that before, but it would keep bitterness at acceptable levels while maximizing hop flavor (possibly too much of a good thing - overshadowing the honey completely?).

I like them, and you're recipe seems sound.

In my experience, the malt comes across very strong in braggots. I did a similar braggot with Belgian wheat lme, coriander and orange peel, and it drank like a strong beer.

I do a banana bread mead with only 10% malt as my sugars and it is still very evident that malt is present

-32 ounces honey (orange blossom recommended)
-16 ounces belgian wheat LME
-4 pounds ripe bananas, sliced into coins, skin on. in a brew or nylon bag
-pectic enzyme

safale WB06 yeast or other wheat beer yeast strain with higher abv tolerance

secondary:
-1 vanilla bean (optional)
-1 ounce cinnamon (optional)
-1 clove (optional)

if desired, add spices, or combination of, and sit for 1 month or to taste
