Current Aoiree souring program aging inventory----

5 remaining gallons of 3.75 year old lambic (Batch 1 - 10 gallons bottled)
15 gallons 7.5 month old lambic (Batch 2)
15 gallons 0 month old lambic (Batch 3)
 
Overall update as of 12/8/2024:

Current Aoiree souring program aging inventory----

5 remaining gallons of ~4.25 year old lambic (Batch 1 - 10 gallons bottled)
15 gallons ~11.5 month old lambic (Batch 2)
15 gallons ~4.5 month old lambic (Batch 3)


Batch 3 still in the 20gal primary because I'm lazy need to move it to my other 15gal and top off headspace. Need to prep my other 15gal for secondary.

Tasted batch 2&3 today. Both surprisingly similar despite the age difference. Both more tart than batch 1 (by memory), more than I'd generally prefer possibly because both have been allowed to have a lot more headspace for longer. The 5 month way more funky/tart developed than batch 1 ever was at this time point.

Will taste the batch 1 but good chance I'm moving towards blending a guezue sometime in the next 1-5 months to mellow things out.

We'll see.
