I have been thinking of brewing a porter or a stout but have no knowledge of what actually makes a good porter. I was thinking of making 5 1 gallon batches using goldings hops and varying amounts of chocolate malt, black patent malt and roasted barely to try and understand what each of these speciality grains brings to a beer. Any help on formulating 5 distinct but similar recipes would be much appreciated as I currently have no idea how to go about doing this.
 
If your goal is to see the difference of roasted grains I'd just find a good base recipe and sub them in at the same percentages.
This is Jamil's recipe where he uses chocolate and black patent. Just make those 2 percentages 1 and put in your different roasts for each recipe. Sounds like a lot of work to me but it would be cool to see the differences.

I did Red Rockets Positively Porter for Big Brew Day and it turned out great. Fastest keg we have killed to date. I think I got the extract kit from AHS, it includes specialty grains but nothing too difficult.

I beleive that one uses roasted barley.

I brewed my third batch yesterday and happend to be be a porter: Robust Porter Black Widow, I planning to add vanilla and cognac later.

Description:

From the recipe 'Black Widow Porter', page 156 of Brewing Classic Styles. For 7 Gallons

Ingredients:
8 lbs 9 ozs Liquid Malt Extract - Light
1 lbs Liquid Malt Extract - Munich
1 lbs Crystal Malt 40L
12 ozs Chocolate Malt
8 ozs Black Patent Malt
0.75 ounce Fuggle Hops
2.5 ounce Goldings Hops
1 packet White Labs California Ale (001)

Instructions:


Steep for 30 minutes at 154 °F:

12 ozs Chocolate Malt
8 ozs Black Patent Malt
1 lbs Crystal Malt 40L

Boil Schedule:

8 lbs 9 ozs Liquid Malt Extract - Light at 60 minutes
1 lbs Liquid Malt Extract - Munich at 60 minutes
1.75 ounce Goldings Hops pellets at 60 minutes
0.75 ounce Fuggle Hop pellets at 15 minutes
0.75 ounce Goldings Hops pellets at 0 minutes

Yeast:

1 packet White Labs California Ale (001)
