Do y'all think using a plastic carboy alters the overall taste of the beer vs a glass carboy?

No.. what would change the beer taste? Ask yourself that question. Would a plastic or glass carboy cause the issues?
It's probably more psychological then real fact.

depends what kind of plastic, PET wont change the flavour but you run the risk of contamination from other plastics

Nope, I've been using plastic buckets and better bottles for all my beer and have experienced no issues with taste, obviously they are all food safe PET vessels.

If they get scratched up over time due to careless abuse they should be replaced but if you take care of them they last a long time. I'm personally going on several years with mine and they still look brand new.

I don't know. I brewed a Nut Brown Ale and a Vanilla Porter. They both tastes amazing but tasted slightly the same. Maybe it is psychological

Maybe it is the water! I am using nothing but Ozarka water. Maybe I should try 2.5 gal of Ozarka & 2.5 gal of Tap water?? What you think

long term bulk aging meads, barleywines and RIS's the oxygen penetration does have an effect. A couple months storage and you'll never notice the difference.
