You can. All the bars I know use 1/4" line. The problem for homebrewers is that it's usually a short run to the taps, and there isn't enough resistance for 1/4" in a short distance to reduce foaming with a balanced system.
If you had a run of, say, 25 feet, then 1/4" would be perfect.
If you had a run of, say, 25 feet, then 1/4" would be perfect.
