I decided to experiment today by making a small batch of beer jelly. I've made wine jelly before which is very good! The beer jelly is delicious! I used a 12oz Youngs Double Chocolate and a 12oz Dos Equis lager (I know it's a strange combo, but I didn't want to sacrifice 2 bottles of Youngs).. The outcome was quite interesting! It actually doesn't taste anything like beer (which kinda bummed be out).. If I had to describe the taste I would say it's a cross between Dr. Pepper and apple juice with a citrus after-bite.. Strange! I'm not sure where those flavors came from, but it's good none the less. My next experimental batch will be with an IPA. I want to see if the hop taste/aroma will carry over.

would love to see your recipe/procedure

The recipe is as follows;

4c sugar
1 box Sure-Jell pectin
3/4c water
3c flat beer (if you don't let the beer go flat it will foam up like mad during the boil)
** You can also sub your favorite wine instead of beer..
Makes 4-5 half pint jars

Cover 5 half pint jars with water in a canning pot and bring to a boil. Maintain boil in canning pot thru entire jelly making process. In a small sauce pot cover lids/seals with water and bring to boil. Once boil is reached in pot with lids/seals turn off heat and cover pot with a lid.

Measure sugar and set aside. Mix Sure-Jell and water in an 8 to 12 quart pot. Bring to full rolling boil for one minute, stirring constantly.

Add beer (or wine) and sugar and return to a mild boil. You'll get a "hot break" just like making beer wort. Stir constantly to control hot break. Simmer until "hot break" falls or 6-8 minutes (whichever happens first). Remove from heat and skim off excess foam from top of liquid.

Ladle hot liquid jelly into hot, sterilized jars quickly. Fill to within 1/4 inch of the top of jar. Wipe any spilled jelly from jar rim and threads with a paper towel dipped in hot water. Apply lids and seals and return full/sealed jars to boiling water in canning pot. Process jars in canning pot for 15 mins. Ensure that you have at least 2 inches of water above jars. Maintain a gentle boil during processing. Remove jars and invert jars upside down for 5 mins. Then turn right-side up and cool..

Shelf life without opening = About a year
Refrigerate after opening, and consume within 8-10 weeks.

I got IPA and Porter Jelly this Christmas from my sister and it's Awesome! When I run out I'll probably make my own.
 
I'm going to experiment more. I was really hoping for more of a "beer taste".. You really can't taste any signs of beer at all. It's still really delicious, though! The wine jelly I made a few weeks ago really has a great wine taste. You can even taste the alcohol in it. I'm thinking I need to try a beer with a higher ABV...
 
I'll eat anything with PB.. I also make a jalapeno/habanero jelly that goes great with PB!
 
I hope you can help me. I made some beer jelly with a recipe a big different than yours (although yours does seem easier). The recipe called for liquid pectin and apple cider. I had the liquid pectin but not the apple cider so I used lemon juice, I also wanted more hop flavor so I boiled up some hops in water and added in place of 1/2 cup of my beer.

The "jelly" has great flavor and aroma but it will not set up. It's still very much a liquid. Any ideas? I have tried to boil it down again with more liquid sure jell but still no luck

I had this problem once when I made wine jelly. It wouldn't set either. Maybe try powdered pectin and re-boil. If that doesn't work, add it to a batch of beer..
 
Thanks for the tip. I tried again with the liquid pectin and still it would not set. I was wondering if the additional hops I added attributed to my problem with the jelly not setting up?

I'm going to try the powdered this afternoon - wish me luck :)
