I'm curious where you got that Red Cap. I tried it during my last trip to Belgium and it was AWESOME, if you haven't had it yet.Here's what I work with...
In these two boxes, I have random cellaring experiments going. I'll occasionally put a bottle in there just to see what happens over the years. (yeah, that's a Westy Red Cap in the far box)

Here, I have my 88 bottle wine rack. Stouts are on the far left, then barleywines, Belgian ales, Geuze, Fruited Lambics, then American wilds. There are a few odd experiments mixed in there, too. I've really been drinking a lot of it lately, so it's a bit sparse.

This whole storage closet is underground and temperature controlled. This was my old guitar hygrometer/thermometer, but the hygrometer broke, so it went to monitor the cellar temp.

That's what I figured you did to keep it cold, I was wondering about heating mainly. But, of course, basements rarely get THAT cold, even in the great white north.I use a little electric room AC I picked up from Sears. $120 if I remember correctly. It keeps a small place like this under control very easily. I only run it in the summer months because, in the winter, it stays between 50-55 on its own.
This closet has two exterior walls that are in contact with the ground outside. It's a great retainer of temperature. In the winter, the walls are 40-45*. I love my set upMan, I wish I had Belgian friends. That's awesome.

OK, it feels good to have never contributed these to BA, but whip them out to BT within a month of joining. I have another fridge or two I don't have pics of, and a few more wine racks.
I'll get them uploaded next time I have a really slow Friday like today.

Anyway I totally agree with you and am trying somewhat hard to switch my cellar over from "this **** ain't gonna age, homeslice" to "aww yisss, I wanna drink that mofo in 10 years".

Thanks Dan Quayle.I'll take my vintage beets over some brown oxidized potatoes any day. If I had my way, every potatoe sold would have a comic sans label instructing to eat fresh!

Turned the space under the stairs into my cellar. Pics are about a couple of months old now.. a lot of those beers have been consumed.![]()
When I moved into my girlfriend's house, it came equipped with an old jam/canning cellar. Now it has beer. Suppose it was a sign?my house came with a perfect cellar of sorts. it has insulataed walls against the naturally chilled concrete walls. I can fit a good amount of beer in there, though I need to inventory what I have and free up some some space, I have approximately 20 cases in there right now.
We need a thread for all root vegetables.
