This is basically adapted from this recipe, without the campden tablet: http://www.sunnysideorchards.com/recipes.html

1 Gal tree top 3 apple blend (granny smith, red and golden delicious blend), pasteurized, not from concentrate, no preservatives listed on label
1/3 lb. cane sugar
1/4 tsp cinnamon
1/2 tsp yeast nutrient
3/4 tsp pectic enzyme
1/2 packet red star cote des blancs wine yeast (i used the other half packet on a basic mead recipe).

I'm using a 1 gal. growler as the fermentation vessel. This is a small experimental batch, and my first attempt. Did not bother measuring OG because it's hard to do without a full boil (heavy stuff settles out when you mix ingredients in the vessel.)

My local costco has treetop. Target doesn't and not sure about wal-mart or sam's club. Haven't looked there recently. The juice we get for the kids at costco is treetop 100% from concentrate, pasteurized, no added sugar.

I usually make cider throughout the year with store bought apple juice when I can’t get fresh pressed cider
My favorite to use is Safeway organics cider theirs no preservatives and its not from concentrate, which is the most important thing, I have found if using other juices, I just don’t get the results that I require.
I also add extra sugar and grape tannin or tea bags
I always now use white labs English cider yeast it also gives it a nice dry taste.

if any of you live near an Orchards or Trader Joe's, they sell organic unpasturized apj in a 1# gallon glass jug. you could drink a glass to give you the room for fermenting it, just slap on an airlock and the necessary yeast/nutriants and let it go.

I buy Carlos Rossi wine it comes in four liter jugs.
I like them because they give a little head room on a full gallon.

I've just started off a batch using juice from concentrate, is it likley to be a bit rank? Should I have used juice not from concentrate?
