I am brewing a 5% copper lager (added a little carafa to the grain bill) and want to lager 5 gallons in a bourbon barrel. Any pointers?
I am going through my regular lager fermentation schedule, will do a diacetyl rest and then cold crash in the fermenter.
My barrel has a handle of bourbon in it now to keep it wet. I am thinking about dumping the bourbon and rinsing the barrel with 200 degree water from my boil kettle to reduce the bourbon flavor. From there, fill the barrel, put in an airlock and put it in my fridge at 34 degrees for a month.
Will this work? Will the beer be too oaky?
