Need some help out on picking a ale yeast for my baltic porter. I know it's usually larger yeast but wanted to do a ale yeast do to temp control issues? I guess I want to make sure the ale yeast can handle a 8.5 to 9% abv!! Only doing a 3 gallon batch so should be good with 1 vial or packet. I was looking into a English ale yeast. The recipe is Jamils (zek baltic porter). Please help out with some suggestions!! Thanks brewers.
 
Look on the AHA recipe forum they have a few there that people have done an ale yeast instead of a lager. Just make sure you pitch enough yeast. If your doing a 3 gallon batch you still might need to buy 2 packs or make a starter.
 
1335, or an alt yeast maybe? With a proper starter, or enough pitched, almost any strain can do 8 or 9%. It should be a cleanish yeast, but Id stay away from cal ale/us-05 (for no good reason really, it just seems wrong). Just make sure you give a long time in the cold conditioner, it will need to age.
 
I'd go with a Kolsch yeast or German Ale (1007 ?) and make a starter for a proper pitch.
 
+1 to Wyeast 1335. It can easily handle that ABV, it is a relatively clean English strain, attenuates well, and flocculates really well. Its my workhorse for many beers.
 
Thanks for info guys, was also researching Cali lager yeast which you can get it up to 65 or Scottish yeast as well! Anyone ever use these? Thanks again!
 
Ive used both, but be aware the cal lager especially is not the highest attenuater (the scottish aint great either id go with 1335 if you are going that route). It can make a good baltic porter, but you need to lower the mash temp, go easy on the crystal malts, and pitch a large amount of yeast (use a calculator like mr malty) or you can end up with sticky sweet mud.
