Step 1 in the sampling process: I like licking the cover seal on the malt extract containers when adding during the boil. Hate to have any go to waste. Mmmmmm!!I sample my beer all through the process, from green wort at pitching to 2-3 times during fermentation, sometimes even daily. I enjoy tasting the transformation.
