I was given some brew kits and a some extra hops by a fellow near me. Among them was a package of Azacca hops. Whenever I get a hop I’m unfamiliar with I make a pale ale. As this pale ale was fermenting I noticed Founder’s put out their Azacca IPA so I picked some up to see what I was getting, what to expect. Once my pale ale was ready I found it far from what Founder’s created.
At first I figured it must just be my pale ale was wonky. I looked up the info on MoreBeer and saw that a flavor aspect was mango, which I can see. However that seems absent from what Founder’s achieved.
So now I’m curious as to what can draw out various flavor aspects from hops. I’d assume their recipe, much like mine, is fairly simple (limited crystal malts). It seems odd that the hop flavors differ so greatly.
