I have 2 oz of each kicking around was wondering if anyone ever used this combo. Probably just keep the grain bill, and hop schedule simple. Maybe 1oz of each in whirlpool then 1oz of each in hopstand. Thoughts / Experiences?
 
Azacca is really tropical and fruit-forward, whereas Chinook is spicy / piney. I think you'd end up with two contrasting flavors. There are hops which have both characteristics (Simcoe comes to mind) but I think my own personal preference is to pair similar flavor qualities. But that's just opinion-- I'm sure others may disagree.
 
Copperhead Brewery in Conroe TX makes a Pale Ale with Chinook (bittering) and lots of dry-hopped azacca. Its a great PA and i am actually planning on trying this in my next PA brew
 
I did a PA using Chinook to bitter (30ibu) and Azacca and Amarillo.
.5oz each Amarillo & Azacca @10
1 oz Amarillo and 1.5 oz Azacca at 0
1.5oz Amarillo DH
2 oz Azacca DH
I kegged this Saturday and pulled a sample yesterday. it was ok.
total 7.7 oz for 5 gallons.
If I were to brew again I would increase all additions as I felt the flavor/aroma was pretty weak.
