So I'm putting together an eBrewery and I'm using a 5500w element on a 30a 240v circuit. Auberins doesn't have 30a SSR...is it ok to use the 40a? I'd assume it is but want to get confirmation before purchasing.

Yes, overspecing your parts is fine, underspecing is where you get into problems.

It's actually a little better. The 40a SSR has parts equiped to handle that load. If you're only running it at 30a, you're not pushing the SSR as hard thus it will have lower heat output and last longer.
