AU Sylva and NZ Wakatu - Help me pick what to brew with them

I bought half a pound each of NZ Wakatu (formerly NZ Hallertau) and AU Sylva (a Saaz derivative).

My next two planned brews are a Maibock and an English IPA, to try out 2 base malts, so I want to go SMaSH-esque on both to get a feel both for the base malts and the hops.

Antediluvian IPA (1.054 OG):
11lb Crisp Maris Otter
4oz Simpsons Dark Crystal 145-165L
Gypsum to Burtonize water and lower pH

Hop X @60 for 50IBU
1 oz Hop X @10
1 oz Hop X @0
Dry Hop 1oz Hop X in keg
WLP002

Southern Hemisphere Maibock:
10lb Avangard Pils
2lb Avangard Munich
4oz Carapils
4oz Acid malt for pH

May do a single or double decoction depending on how early I start and how energetic I feel.

Hop Y @90 for 30IBU
1 oz Hop Y @15
.5oz Hop Y @0

WLP833 German Bock

Supposedly Wakatu has sort of a floral lemon-lime thing going on, and Sylva is supposed to be Floral/Spicy/Herbal. Either one sounds as if it would be nice in either style... any one have experience with these hops? Should I flip a coin to decide? :fro:
