What do you think would happen if you pitched a hefe yeast (wlp300) into a 44 degree wort that was suppose to be a helles and then a couple days later pitched white labs bock (wlp833)? Would the helles yeast still ferment out a clean lager or would the hefe yeast have some activity and give off some esters? I believe I mixed up my two yeasts and made a starter of the hefe vs the bock yeast. I was thinking if I skip a diacetyl rest and keep the temp low I may be able to keep all the hefe yeast dormant.

Or should i just raise the temp and have a wheatless hefe?

was the hefe yeast a starter? If it wasn't i would doubt you would get much from it. I would lager the batch and hope that it would have a little banana note as opposed to a lot of banana.
