Apple juice mead

Making a basic apple juice mead
3lb honey
84 oz apple juice
1pk Lavin 1116
8gr yeast food
Sg see the picture (I really haven't learned precisely how to read the hydrometer)
House is cool looking forward. This is the most basic mead I have made. I have mulling spice blend for secondary.

Apple Juice Mead = Cyser. That gravity (through the foam) looks to be about 1.127. That should put you in the 16-17% abv range.

You think this will mellow? I most certainly hope so. I plan on adding mulling spices in secondary.

If its not mellow enough, you can sit on it a while. Outside of that, adding some sweetness helps mask some hot meads.

I'd probably do my mulling spices before I added sweetness so you can tailor the overall flavor.
