Basically I make strong apple cider (ABV: 14-15%) and have made a few batches now. Here is my recipe:
1. I ferment 20 litres of apple juice with extra sugar
2. After about 3 weeks when the yeast has settled, I remove it from the box leaving the yeast at the bottom of the container
3. I backsweeten the cider and add potassium sorbate to stop further fermentation
4. I bottle the cider in plastic bottles.
the problem I have with my cider is that it has a yeasty smell that most people find slightly unpleasant. My question is whether it is possible to mask this smell with some liquid essence I can buy from the store e.g. vanilla or something. There is also a slight bitter after taste that would be nice to get rid of. I am looking for a cheap solution.
