So, one of my friends has a charcoal smoker and we plan to smoke our own malt tomorrow to make a smoked porter (half and half apple/cherrywood). How much base malt should we smoke? I was thinking about half of it... is that ok? (4kg (8.82lb) or 36.4% of the grain bill)
I want something really smoky, yet not overpowering...

Cascade (homegrown ~4.8% AA), 1oz @ 30min
