As you can most likely tell by the title of this thread, I have an apfelwein that is not clearing, it has been fermenting in primary for more then 3 weeks and the grav reading is at 1.008 and has been consistent for 2 days. I am curious about this because it is my 5th batch and most seem to clear up by week 2 and this one is not. I used 5 gallons of the Organic Apple juice from Whole foods and a pack of Montrachet.

I have two batches that I started March 15th and the both have not cleared-not even close. The SG of both is less than 1. I am going to leave them alone as everyone says and see what happens. I have tasted Apfelwuin made by a member of my club and it was awsome.

Ummm not sure how yours have been fermenting and clearing in two weeks, but 3 weeks is still nothing to worry about. Give it a few more weeks.

The quickest I've ever seen Apfelwein clear was in 4 weeks, and that was with an ale yeast (Munton's Premium Gold, to be specific). It wasn't too bad at 4-5 weeks, but it was much better at 9 weeks.

The slowest I've seen it clear is at 8 weeks, using Montrachet at ~68 degrees. Since then, I've ramped up my fermentation temps up to 72-75, and never looked back. Fruity esters aren't really a concern with Montrachet (in my experience, anyway) and I doubt a bit of fruit flavoring would hurt an apple-based drink anyway.

Thanks all! I have afeeling my others have cleared due to using apple juice from walmart which is already clear versus this batch which was using organic juice hich was cloudy to begin with....

If it was cloudy juice to begin with, you're looking at AT LEAST 8 weeks to clear, although without pectic enzyme, it could be as long as 4 MONTHS to clear.

I have the same thing in my primary, WH Organic. I used peptic enzyme to help things out. I started in on April 11th. It's not even close to clearing yet. And I'm not sure it will clear without help.

I'm going to let mine go for as long as I can stand it. And if it's still not clear, I'm going to try cold crashing it. And if that doesn't work, I'll try some Sparkaloid.

Good luck with yours.
