I just bottled my first batch of Apfelwein and immediately started a new batch going. Just to start my taste buds experimenting with different variations; I used White Labs Cider yeast for this batch. It took off like made and it sure is fun watching the yeast move throughout the car boy as compared to the wine yeast just getting cloudy and slowly clearing.
My question is this; what difference in taste can I expect between the two yeasts and what might be another yeast to try next?
Not that the original recipe needs changing, I am just trying to educate my taste to variations on a single recipe to improve my brewing evaluations.
