Just bottled edworts apfelwein, done only slightly differently.

Used 2 cups of sugar instead of 2 pounds (didn't want the high alcohol, and was hoping to get a bit more sweetness)

used ec1118 champagne yeast (because that's what I had already)

very pleased with the result.

1) finished and cleared in 3 weeks on the dot

2) really nice flavor going into the bottle - tasted like a dry commercial cider - IE: great flavor without the sugary sweet flavor you get w/commercial ciders.

Waiting another week (for carbonation) before cracking another bottle. I suspect (like so many others have reported) that this will become a house favorite.
 
Everyone here has done an Apfelwein. I do believe I am the only one that hasnt I think. And it sounds so easy, thats it, my next batch has been found

what was the start and bottling SG? did you prime before bottling?
 
Wyeast Weihenstephan 3068 makes a superior cider or apfelwein - give it a try on your next batch and try to let it age for a full year before bottling or kegging. :ban:
