Hey guys, im planning on doing a HEFE, like the one i drank on Munichs Octoberfest...it was dense, and orange!...it tasted like glory i cant even describe it....

i have a basic hefe recipe that calls for

6.6 half wheat half barley malt
1/2 oz hallertauer
bavarian wheat yeast

also, the store i usually buy from doesn't have bavarian ingredients, any online store got some?

If you are doing only extract I've got one.

I can't remember the specific Original gravity but...

Use (appropriate amount) of Wheat DME (Try to hit 1.048-1.050)
4oz light munich malt
4oz carapills
(steep those grains at 150 for 20-30 min)
1 oz hallataur at 60 min
Wyeast 3638

Will turn out pretty good. I actuall prefered it over Pallauner side by side. But of course homebrew version was fresher so it should have an edge.

Can't say I know a Paulaner clone recipe, but here's the recipe for a partial mash Bavarian Hefe that I'm brewing this weekend:

3 lbs wheat DME
4 lbs wheat malt
2 lbs pilsner malt
.75 oz Hallertauer (60)
.25 oz Hallertauer (5)
Wyeast 3068

Hefeweisses are one of the beers that I think are best when kept simple. Just make sure you use a good quality yeast and at least 50% wheat in your grain bill--those are really the lynchpins of any hefe.
