Just thought I'd check around these forums for anyone's impute on this. I was thinking like cut up apple slices and a couple of cinnamon sticks with honey of course. Any objections?

I doubt you'll get much flavour from those cut up apples. I think you'd be happier with a cyser, which is mead made with apple juice instead of water.
Regards, GF.

I started one 6 weeks ago. It's really good! Although I wouldn't leave the cinnamon sticks in as long as I have. Id recommend putting the cinnamon sticks in a tea bag and take them out once you like it.

12# wildflower honey
12 granny smith apples (I put them in the blender)
1/2# raisins
4 cinnamon sticks
Wyeast sweet mead yeast

It's my first time with sweet mead yeast. It finished at 1.04. I might repitch because it's really sweet. I racked it this weekend and it's super clear already.

Repitching would work if you haven't reached the alcohol tolerance of the yeast you are using.
