I just bought a 49oz can of Vinter's Harvest Strawberry Puree for a strawberry blonde I'm planning on making for a friends wedding next month and plan on brewing it this weekend. Has anyone used this before? My plan was to take the 2nd runnings from a Saison that will be around 7lbs 2 row / 7lbs white wheat and use that for the grain base and add DME as needed to boost it to around 1.045 preboil. I have a bag of 4lbs of frozen destemmed strawberries that I was going to food process and add in a nylon bag at flameout, then add the Vintners puree at flameout. Does this sound like a workable plan to anyone?
 
Well 8 years later, how did it turn out? I am thinking of adding Raspberry puree to a Mosaic Wheat at flameout. I have an opened can of the Vintner's Harvest that was left opened after I bottle conditioned some mead with it. i figure the hot wort will help pasteurize the puree since it has been opened already.
