I'm new at winemaking and I was looking over some future recipes I want to make. I've noticed some of the recipes in the book that came with my 1 gallon kit, call for an antioxidant at bottling. Is that different from the potassium sorbate stabilizer?

Yes.

Sorbate inhibits yeast replication.

Sulfite (e.g. potassium metabisulfite) is an anti-oxidant and anti-microbial. It's should always be used whenever adding sorbate.
