Hello all. I decided to put this in the beginner section instead of fermentation, because I'm still a beginner in this aspect and am looking for peace of mind.

I just got the Bourbon Barrel Porter kit from NB:
http://www.northernbrewer.com/shop/bourbon-barrel-porter-extract-kit.html

When I bought this with the Windsor dry yeast, the employee suggested that I buy 2 packs (1.065 OG). I did as she said. I checked Mr Malty as well, and that one tells me that just a little more than one pack should be sufficient. I have never made a beer this strong, thus never needed to worry about going beyond one pack, so I'm a bit nervous. Am I okay just throwing in 2 packs, or should I use only a bit of second pack to comply with Mr. Malty's numbers? I could use the remaining yeast for something else, but if I'm safe just putting in 2 packs, that would be much easier (but once again, I'm a bit afraid of doing that).

Pitch them both. You'd have to over pitch by a lot more than that to have any serious issues.

Yeah overpitching at a homebrew level isnt really an issue. I have nothing to back this up, but I'd think you'd need like 5 packets or so to have any major issues from pitch level

Cool. Sounds good. Hope it turns out well. I had a Wild Turkey Bourbon Barrel Stout at the Yardhouse once and loved it. If it's anywhere close to as good as that I will be happy.
