I am about to use OneStep when bottling tonight, and I am wondering if I need to let the bottles dry before I use them? Or, is it safe to simply shake the bottle upside down to get all the water/OneStep out and then fill it up with brew?

One-Step is a no-rinse sanitizer. I would get all of the water you can out of them, obviously it would be better if they were dry. We have bottled with a few drops in the bottle, it hasn't been an issue.

What's the generic chemical? I'd think one could by this in bulk through chemicalstore.com...
 
Its a percarbonate. It makes soda ash and hydrogen peroxide.

there is a discussion of sanitizers as well as a break out of the cost of sanitizers.

One-Step is the most expensive of the three commonly used sanitizers. However, we are talking about eleven cents a gallon, when you buy it in 5lbs bulk.
