My buddy has some Anise extract and wants to use in some beer. How much of his 1oz bottle would make his brew licorice tasting w/o being overpowering?

Even though Licorice and anise extract produce similar flavors, I've never found a discussion of how they compare. A stout will use 1/2 - 1 stick of brewer's licorice. Either exeriment with a drop or two in the type of ale you will be brewing or wait until it's in the bottling bucket. Since 2 oz. of extract will make 5 gallons of Halloween I-Scream...

I'd go extremely light with that anice extract at first. Using whole anise only requires one or two whole, uncrushed stars in the boil, so be careful.
You may want to wait until bottling time to add it. Take a measured sample and add the extract in measured amounts until you get a taste you desire, then scale it up for the whole batch.

Or dump the whole thing in and use less or more next time.
