Hi,
I recently brew (all grain) an American Wheat for the 3rd time. This time I used citra hops instead of centennial but otherwise they were all the same. The brew steps were the same each time and the fermentation. They all came out great everyone loved them. But now after two months the 3rd version has become very "fizzy". It has very good head and retention. It tastes fine but it's like someone added some spritzer to it. I was away for two week and only noticed this after returning.
Any ideas what might cause this. I'been brewing for a long time and never had anything like this happen before.

Thanks.

Pat.

The additional carbonation after some time in the bottle may be the result of late fermentation due to wild yeast contamination. Best in my simple opinion to store your beer cold if it's gonna be around for a while.

Store this beer ocold and consume ASAP prior to more bottle ferm and carbonation, search term "gusher"

Thanks for the replies. Sorry I didn't say it was bottled.

Wilserbrewer's comment "be the result of late fermentation due to wild yeast contamination" sounds very plausible. I'll make sure they are all sorted cold and see if I can finish them.

I never had "late fermentation due to wild yeast contamination". Any suggestions on how to avoid it in the future.

Thanks.

Pat.

Double check all your sanitation practices. Low level infections often aren't perceptible for a while until they develop.

When I had a wild yeast issue, I bleach bombed every piece of post-boil quipment I had. I also replace my plastic tubing.

Then be vigilant about sanitation practices moving forward.

Hi Pappers_

Thanks for the advise. I'll do all the suggestions you have. I do sanitize every time I brew but I'm sure I get a little careless from time to time.

Going to brew again soon and will make sure it's all really clean.

Thanks again to everyone who replied.

Pat.
