I just received a mini mash kit I ordered and here's what it is:

5 lb Extra Pale lme
2 1/2 lbs 2-row
8 oz Crystal 60L
4 oz Chocolate
1 oz Black Patent
1 1/2 0z cascade (60 min)
.5 oz cascade (5 min)

155deg/45min steep
170deg sparge- 1qt/lb grain
Add one gallon, boil, and add extract.

I have a big enough pot to do a full boil and I'd like to know what I need to change to accomplish that. I love Brooklyn Brown Ale and I hope this comes close.

Thanks
Wayne

Should be fine without adjustment for the full boil. For awhile people thought that bigger boils extracted more btterness from the hops, but recently I've been reading that it isn't the case. Anyway, 1.5 oz of cascade will not make a too bitter American Brown.

Thanks Oldsock. I started playing with BeerSmith last night and it puts it at the low end of ibu for the style. I'll just follow the recipe with a larger boil.

I'd say to get closer to the level of hoppiness in Brooklyn Brown you'd need a total of about 1-1.5oz finishing hops. Maybe 3/4 at 10min and 0min. But it will make a fine beer without these adjustments.

One way I've found to get a little more extension from my hops is to add them at flameout and then just let them steep for 15mins, covered, before turning on the chiller.

I've found a few clone recipes that call for 3 or 4 different additions of hops. Is there something different I can do with the 2 oz in the kit to get the most flavor?

I wouldn't steal any of your bittering hops for flavor and aroma... you'll probably need the full 1.5oz to get the required bitterness

I wish I had a LHBS. I'd go pick up another oz or so. I'm sure this will turn out good. After a taste I can decide what to add next time. Thanks

After doing some research on American Browns and reading Designing Great Beers - this style should definitly have some hop kick. That kit sounds great though. I might use that for the brown I'm making just add some more hop. Let us know how it comes. I'll update with what I wind up doing..

Bottled on Wed and stashed one it the fridge last night. It's flat of course but I can taste the potential. I think the hops are perfect. Certainly less than the Brooklyn Brown but I can't complain about anything in this beer. I wouldn't hesitate to recommend it. I did add about 8 oz of amber dme that I had sitting around.
