Amarillo, Nelson sauvin and marris otter recipie

Hi all,

Rushed trip to the brew store yesterday and grabbed 6kg of marris otter, 100g of nelson sauvin and 100g amarillio leaf. I got the Nelson as it was organic then asked the guy what goes with it and he said Amarillo. Does any one have any recipe suggestions? I was thinking either Two SMAH batches or one larger batch with both combined but not sure what and how much to use for bittering and aroma etc.. Any help will be much appreciated. Im using safale us05 as the yeast.

Also when malt is crushed how quickly should it be used? Currently its vacuum packed...

Any input much appreciated.

I'd combine the two hops and use all late hopping (last 20 mins). Nelson is a fairly dominant hop so I'd use less of it than Amarillo. Something like....
Maris Otter to achieve an OG of 1.050 to 1.055
Mash at 152 for 60mins
1oz Amarillo at 20 mins
0.5oz Nelson at 20 mins
0.5oz Amarillo at 10 mins
0.25oz Nelson at 10 mins
0.5oz Amarillo at flameout
0.25oz Nelson at flameout
Dryhop with both if you like to dryhop

Crushed grain will keep for at least a few weeks. Seal as best you can to keep air out and in a freezer if possible.

Edit - hop amounts are assuming 5gal batch and might need adjusting to keep to about 35 IBU's (depending on AA%)

unless of course we're not getting the whole story, and you asked, "what hops goes with this?" in which case, he's only a half-wit lhbs worker.

there are so many things that could go with that malt. it's a base malt. you could've added multiple different combos of specialty grains to match recipes for multitudes of styles.

then there's the hops. you can add whatever hops, and any combo of hops, you like to your beer. there's not one set hop that goes with one set grain. and especially considering that is an english malt, you would think he would suggest some english hop. :smack:

so there are seriously 1,000s of different things that could go with MO, not just amarillo.

rant over... on to your questions:

if it were me, i would find some proven pale ale or ipa recipe out there (or on here), then i would head back down to the lhbs and pick up the specialty malts in that recipe. if the recipe calls for pilsner malt, or any kind of pale malt, that's where your maris otter will replace.

then i would find a free online recipe calculator and punch in the numbers for those hops at the appropriate times until you get the IBU level you're hoping for. suggested hopping times will differ depending on the person, and of course depending on the style that you choose, and the size of the brew you're going to do. but i would probably do somewhere around 15g each at 60 min. 20g each at 5 min. 30g each at flameout and then cool that to around 75-80C and let it sit for 20-30 mins. Then I would do the rest, which should be 35g each, as dry hop. something like that, but again adjusting those numbers according to the style guidelines, and all that stuff that i mentioned.

come on dude, you gotta give the amounts in grams since that's what he's using... ;)

but really it doesn't translate well. 28 grams at 20 mins, 14 grams later on, 7 grams another time...

I'm Australian.....we use grams.....I'm just so used to converting everything on here into ounces!

The idea of the hop schedule is to give about 35IBU's with a 20, 10 and 0min addition, using half as much Nelson as Amarillo.

Sounds to me like the OP was simply asking what would be a nice hop to go with Nelson. I don't think it makes the guy a half-wit to actually pick one.

OP I've done a SMaTH if you want to call it that with MO, Nelson, and Amarillo that came out great. Sort of similar to what Gnome suggested but more hops and closer to 1:1 ratio - it sort of straddled the APA/IPA line. This was for a 3 gal batch (I'll let you do the conversions):
OG 1.056
FG 1.010
IBU 49

bittering to get about 20 IBU
0.5 oz Nelson/0.5 oz Amarillo at 10
0.75 oz Nelson/1 oz Amarillo hopstand
0.5 oz Nelson/0.5 oz Amarillo dry hop

Yummy. I did the same recipe with Simcoe and amarillo, also yummy.
