Tonight I'm bottling a Simcoe / Amarillo red ale that *I* thought was imbalanced at BU:GU 0.95. I undershot my OG, turning what should have been a nicely balanced beer into an accidental hop bomb. The hydro samples have been pretty harsh so far.
Do you think that once it carbs and conditions it might still turn out good?
