Hey there. From Hawaii, specifically Big Island. So, I bought a piece of property that has quite the orchard! I have about 6 trees each of Jack fruit, Soursop, Mango, Jaboticaba, Star Apple, Starfruit, mountain apple, ice cream vanilla bean and Dragon fruit (if I actually treat it right) and a ridiculous amount of Avocados. I also have some local kinds of fruit that I'm still trying to identify. That being said, I do not eat these types of fruits, except Jack fruit, on occasion. I asked myself, who the hell eats this crap. So, I did research.
I have discovered that who owned the orchard about 60 years ago, yeah, they had a local moonshine business going! I am very interested in rejuvenating that tradition! Specifically looking at wine, rather than moonshine, but eh...business is business.
So, any of you mind pointing me to the right direction? I have picked up the basic equipment, specifically to make a light mango wine. I want to start up a local winery that specializes in local wine making from exotic fruits. Considering I dumped 10 tons of Starfruit last year. Please, don't hate me. I knew not what I did.
