All-grain batches not "finishing"

I'll try to explain this as best as I can and I hope you folks can help. Been brewing all-grain for about a year. Recently I started using a RIMS system with the Blichman Tower and Power (moved up from an igloo cooler).

Since I've started using the RIMS system, I've had a few batches where the taste doesn't seem to finish. In other words, when you take a sip, there is no real finishing flavor--if that makes sense. All are recipes that I got from websites or books, so I'm following them to a tee. It's almost like the beer is watered down, but I sparge enough to get about 7 gallons and then with boil-off I end up with five--sometimes a bit less.

Am I just nuts or is there something I may be doing wrong.

What are your starting and finishing gravities?
Are your beers finishing too low in gravity and ending up tasting thin with no mouthfeel?
