Does anyone use ale yeasts with lager recipes? I have a Kirin recipe that I am thinking of using S-05 with, but am not sure what I may end up with. I would ferment at S-05 temps. Any idea of what the results will be?
Sounds like a Blonde Ale to me.
I can barely taste the difference between a light lager and Blonde Ale but I would imagine more delicate palates would. Still it should be light and refreshing which is what you wanted.
I am thinking of trying to make a Bock with Ale yeast so let me know how your experiment goes.

This yeast has a wide fermentation range (59-70F) if you can keep it low then it will taste more like a lager. If you run it high then you are going to get fruity esters...not lager like.
