I've always used the one that lookalike an S for making wine, tried using the one with a slide for the beer, it seemed to lose the water so I put the S one on is this a problem or personal preference

They both do the same job. I will say that if you have a blow out the S type are a little harder to clean.
 
I've been using the three piece type just because it's what was included in my first hardware set, and it's what I'm used to. I've already had one get filled with blow-off and could have cleaned it up, but tossed it instead (cheap to replace, and I have extras on hand)...

100% personal preference. Use either what you like, are used to, or can get your hands on easily. The LHBS that I visit has both types in stock typically.
 
I liked the S ones for awhile on account of them looking so scientific an wahtnot, UNtil i realized that they break easier, are hell to clean, and that youcan attatch a blowoff onto the 3 peice airlocks,
