I'm just a rookie at brewing so I need to ask a question or two. Which of these three kits would be a sweeter brew?

Also, does the yeast make THAT big a difference? All I've ever used was Munton's Ale yeast.

And last but not least, does the yeast fuel and alcohol boost make a difference too?

Yes, it does make a difference. 40% of the beer's flavour profile comes from the yeast strain used. A Belgian-style or Trappist-style beer would not have the plum/raisin/fruity flavour profile if you used a neutral flavour yeast such as Nottingham or WLP001.

I did not understand your last question. As for those kits you posted, it depends on which yeast you choose. If you want a "sweeter" beer maybe try the English Brown kit and use an English yeast. You will get a citrusy or fruity finish that may give the impression of "sweetness." English and Irish yeast strains tend to be more fruity or citrusy than American yeast strains.

I guess I should say that the beers I like are beers like Young's Double Chocolate Stout and Brooklyn Brewery's Black Chocolate Stout. I've never tried making such a brew as a stout.

As to my last question, what can I expect from the alcohol boost and the yeast fuel.

Just my opinion but the alcohol boost and yeast fuel are not needed.
The boost only bumps the alcohol % up by 1% and most of these beers are supposed to be low alcohol.
The yeast fuel just makes for a faster fermentation start.
Neither are required!
 
if you want an alcohol boost, just buy a lb or two of corn sugar, that will jump it up a good amount... or add brown sugar for a boost and a slight butterscotch flavor.

As for the yeast fuel, not needed
