Ah, I cooled my wort after boil all the way down to 58 degrees. Should I wait till it gets up to 65 or so before pitching? I'm doing an ale with Nottingham yeast.
 
Go ahead and pitch Its ok to let the yeast wake up slowly by coming up to temp try to keep your temps in the 60's So you dont get off flavors. search for Waterbath fermentation Cheers
 
Pitch the yeast. In Winter, my basement gets colder than that, and that's where all my beers go to ferment.
