I've searched the forum, and can't find an answer to this question.

I've got a peach and spice beer, it's been bottle conditioning/aging for almost 3 months. I tried one last night, with SWMBO, and determined:

1. the peach flavor diminished a bit (which is good, it was too much),
2. the spice flavors diminished too (which I expected).

SWMBO wants to know if, by waiting longer before cracking the rest, the spice flavors will return at all. Or is it the case that when it's gone, it's gone?


Thoughts?

Not sure what spices you used, but whenever I use corriander it definately mellows with time. It never completely went away, but it did mellow more with age.
 
I used cinnamon. Sorry I didn't specify.
