OK, we have our batches in the bottles. They have been bottle curing for the appropriae times etc. So what is the best way to store these bottles now? I have them stored in a closet at about 65 degrees. is it best to leave them like that? or put them in the fridge? any opinions?
 
bottle curing???

leave the bottles in your closet for 3 weeks minimum. then take one out and stick it in the fridge for a day. open and see if its carbed enough. if not wait a week and try another bottle. once you are satisfied with the result put the rest in the fridge for a few days then open and enjoy the brew.

If you have the room, I'd suggest putting all of your bottles in the fridge after they are properly carbed. The longer they are in the fridge the clearer the beer will become, and any yeast left from bottling will settle creating a more dense sediment at the bottom of the bottle allowing you to get less of said sediment in your glass when pouring to the shoulder.:mug:

i would put a weeks worth of beer in the fridge. then when you take one out put a warm one in to replace the one you took. that way your beer can keep conditioning while still giving you plenty of drinkable beer.
