I didn't reach my estimated FG on my first brew. It should be at 1.007 and the reading I'm currently getting is 1.014. Should keep the beer in my fermenter longer or should I bottle? Any help would be great, thanks!

recheck your SG in two days and if it has not moved then you should be ok to bottle but another week in primary would be ideal from a quality stand point

Remember too, OG and FG are pretty much estimates and if your OG was higher than predicted your FG could end up higher as well.
But as fatherbigfoot said, 3 weeks primary is very good advice!!
Patience really can pay off in brewing!
