Heya

I didn't like the Dogfish Theobroma beer but I loved the idea so I picked up
some cacao nibs and whole ancho chili peppers.

My idea was going to be to make an imperial porter or stout and then throw these into the secondary - making only a bittering hop addition

anyone have an idea of how many/much of these fun ingredients to use for a 5 gal batch?

I have three whole ancho chilies and an 8oz package of cacao nibs...

also, would you use White Labs 001 or 002?

Thanks!

I would actually try to split the fun ingredients and add half to the brew kettle during the last 15 minutes or so. I would add the second half of the ingredients into the secondary. When adding stuff like this to the secondary, you're going to impart more aroma than flavor, whereas adding it to the end of the boil will give you the flavor.
