Advice for a fruit braggot

Hey all, looking at making a fruit braggot, though not going to be making it for a little bit (no fermenters available).

There seems to be a large number of Melomel recipies and advice on here, but there is less for braggots and little to none for fruit braggots, so not sure if my initial plan is terrible or just not commonly done.

Thinking of doing a rough 45/45/10 ratio for honey/grain/fruit with the 10% coming from fruit juice, and the grain bill being that of a witbier.

So something along the lines of:

1kg 2-row
1kg flaked wheat
1kg flaked oats
250 grams munich
3kg honey
750ml rasberry juice
2kg rasberry
1kg mixed berry (blueberry, strawberry, rasberry, blackberry)
1.5oz Amarillo (15 minutes)
Witbier yeast
 
You may want to consider omitting the raspberry juice and the 1 kg of mixed berry and increasing the raspberry to 3 kg. Keep it simple and you can see how much of the fruit character comes through.
Another way to do it would be ferment the beer ingredients and honey together and then split it up in 3 batches and add the raspberry juice, raspberry and mixed berry individually in secondary and then blend to taste when everything is done.
 
Keep it simple is a really great approach to making wines and meads. The more complexity in the process or the ingredients the poorer the end product will taste. And that you can take to the bank. :yes:

Yeah, in hindsight there is probably a good reason there isn't much info regarding fruit braggots.

I may just do a Melomel instead and another time do one with some wheat DME in a 1gal fermenter.
