my last batch i ran out of time and decided to seal the bucket with a airloock and pitch the yeast the next day after it cooled, will this cause my beer to be bad, or is this an acceptable way to picth yeast. i am rather new and haven't the money for a wort chiller as of yet. i was cooling my wort with a sink full of ice and salt and by stirring the wort until cool. the guy at my brewshop says buy stirring the hot wort with the ice water on the outside will cause hot side aireation. damned if you do damned if you dont. any thoughts on the first question appreiceated...
 
I've pitched on day two when I couldn't get the temp down enough on brewday. I've not had any negative outcomes. I still wouldn't wait too long.
 
The hot side aeration is not what you shoul be worried about.

I'd be concerned about the fact that you stirred the open wort in you kitchen, which is one of the most ifested places. Many brewers do that though, but since they are able to pitch the yeast early the microbes that got into the wort don't really have a chance. But if you now let the warm wort sit overnight, an infection may get established in the wort before the yeast is picted. I'm not saying that your beer will be ruined for sure, I'm just pointing out that your margin to an infection got smaller.

As others will suggest to, try to pitch the yeast sooner or find a more sanitary way to chill the wort.

You will probably be OK but your goal should be to pitch the yeast as soon as possible. Allowing the wort to sit especially at elevated temperatures increases the risk if infection.
 
If I understood your post correctly, when you stirred your batch in a cold bath, you pitched right away. That should be fine.

If you didn't do the cold bath at all on your last batch, you won't get a cold brake, hence you'll get chill haze in the beer. Won't hurt it's taste, only apperence, and it won't store as long as if it had gone through the cold brake.
 
When I do an ice bath in my sink I don't stir the wort, just the ice bath once in a while. I haven't had a problem yet and I get the wort chilled down to 80 in under an hour.
 
You are much better off cooling the wort with the ice bath and pitching the same day. Hot side aireation is difficult to achieve intentionally, much less by accident. Letting the wort cool 'naturally' is an invitation to bacterial infections.
 
Also, there's 'gently stirring' and there's 'violently stirring and splashing the hell out of it'.

I stir my hot wort to cool it with an IC, but I don't splash it around at all.

Hot side aeration is much debated anyways. I try to avoid it though.

your beer is probably gonna be fine, as long as you had everything sanitized. but I'd work on cooling things down, as the more times you try to skate by, the more likely that one of those batches will get infected.
