I'm brewing an Imperial Stout that I want to bulk age for 4-6 months soon. My Secondary is going to be a 6 or 6.5 gallon carboy. I've heard mixed things about CO2 and oxidation with a carboy that big. I'd rather not risk it for a big and expensive brew. So I'm thinking of boiling some sugar or 1/2 to 1 cup of DME in some water and adding it to the secondary so the yeast have a little more to eat and create a new CO2 Layer.

Good idea? Bad idea? Sugar or DME?

I don't have a CO2 tank to inject into the carboy FYI.

Fine idea. I do this fairly regular to avoid the same thing. You can also transfer to secondary right at the end of primary fermentation so that when the beer has been transferred to secondary it makes another layer of CO2 while finishing the last of primary.

Get a 5 gal carboy for your secondary. no need for it to be that big it will give you alot less to worry about.

Right, I understand 5 is better for secondary, but when I purchased carboys I got them bigger in the thought they could be used for both. Not much room for another carboy, but I just might have to soon enough.
